How I Lost 20 Pounds in 3 Months and Have Kept It Off
In 2018, I was struggling to make healthy food choices and experienced constant joint pain, brain fog, blood sugar highs and lows, and extreme fatigue every day. These were symptoms that had become a part of my every day and was something that I thought I would always have to live with.
However, I knew there had to be a way for me to feel better, so I started doing research on evidence-based ways of eating that supported long-term health. As one of the healthiest diets in the world, the Mediterranean diet showed up repeatedly in my searches. In 2020, I decided to make the shift toward eating a more Mediterranean-based diet to support my health.
I started applying what I learned by following a Mediterranean-based diet and immediately saw great results!
After implementing a Mediterranean-based diet, I quickly noticed my energy levels drastically improve, I was sleeping SO much better each night, and my skin had become clear and glowing (yay for no more “adult acne!”) and I did all of this in a healthy, balanced way. I was so ecstatic about my results that I put together all my recipes that I had used and developed at this time and started sharing them with others with the hopes that they would feel just as amazing as I was feeling.

Secret #1: How to figure out your unique calorie goals and how to count calories effortlessly
When trying to lose weight, it is important to make sure you are eating enough calories for your body to properly function and feel it’s best. Over-eating can cause weight gain, and under-eating can cause nutritional deficiencies and other serious problems.
Counting calories can seem like a daunting task, but I have found a way to make it easy and effortless. In just a few steps, you can be on your way to effortlessly counting calories and eating according to what your body needs to be nourished and thrive.
I use MyFitness Pal to keep track of my daily calorie intake. It is easy and only takes a few minutes to set up a free account on their website. I go into depth on how to create a free account and get started in my blog post How to Count Calories and Macros using MyFitness Pal.
Secret #2: How to choose the right foods for weight loss without giving up the things you love
Chocolate and pizza: the two things I absolutely could not give up completely or I might actually die. (Okay maybe not actually die, but that’s how I imagine it happening.)
Finding a sustainable and successful meal plan is all about balance. When I lost 20 pounds in 3 months, you can bet I still occasionally had a slice of pizza and piece (or two) of chocolate. Life is not meant to be lived without the joys of a high-quality piece of dark chocolate or a fresh baked pizza.
There is a lot of research being done on the benefits of eating a whole-foods, Mediterranean-based diet. This diet is unique in that it:
Encourages enjoying fresh, delicious fruits and vegetables every day
Is one of the least restrictive “diets” out there
Is sustainable and allows us to still enjoy the foods we love

Secret #3: Find movement and exercises that you actually enjoy doing
I have never been an overly athletic person. I still very much relate to Mia Thermopolis from Princess Diaries… I’m a “yoga doing, horseback-riding, wall climbing type girl.”
It’s important to find activities that you enjoy that will keep you active. For me, I have developed a yoga routine that I love and that keeps me physically fit and benefits my mental health. It’s a win-win. Other activities you might enjoy include walking, hiking, bicycling, golfing or skiing. Workouts don’t have to be dreadful. In fact, the more enjoyable your activities, the more you will want to do them!
Secret #4: Create a meal plan that works for your busy lifestyle
We all have different schedules, daily obligations, and challenges that make it hard for us to lose weight and eat healthy. For me, I work 13-hour shifts as a nurse and have to meal plan carefully to make sure I have healthy meals and snacks on hand. For you, it may be a stressful corporate job or juggling your kids’ many after-school activities that make weight loss difficult. Whatever your challenges, creating an easy and sustainable meal plan can set you up for success.
