You can also make this dish using a slow cooker.

  • Simply place all of the ingredients in your slow cooker and allow it to cook for 8-10 hours.

  • Remove the beef roast from the pot and shred using two forks or a meat shredding tool.

  • Return the beef to the pot and mix to combine.

  • Add hot sauce to taste and serve.

Servings: 8

Ingredients:

  • 3.5-4 lb. beef roast

  • 2 Tablespoons extra virgin olive oil

  • 1.5 lbs. baby potatoes, cut in halves

  • 2 small yellow onions, diced

  • 4 cups carrots, diced or cut long

  • 4 cups celery, diced or cut long

  • 1 Tablespoon minced garlic

  • 2 teaspoons Dijon mustard

  • 1 Tablespoon tomato paste

  • 2 teaspoons pink Himalayan salt

  • 1 teaspoon ground black pepper

  • 1 teaspoon dried thyme

  • 2 Tablespoons apple cider vinegar

  • 2 cups beef broth

  • hot sauce to taste

Instant Pot Directions:

  • Place all of the ingredients in the Instant Pot and set it for 1 hour and 20 minutes.

  • Once done cooking, allow the Instant Pot to do a natural release of pressure.

  • Remove the beef roast from the pot and shred using two forks or a meat shredding tool.

  • Return the beef to the pot and stir to combine.

  • Add hot sauce to taste and serve.

Slow Cooker Directions:

Place all ingredients in the slow cooker and cook for 8 hours. Follow the last 3 steps of the directions above and serve.
