Just 5 Ingredients and Ready in 25 Minutes
This recipe comes together quickly and is a great last-minute side dish option if you have mushrooms on hand. Simply put everything in a baking dish and bake for 25 minutes.
Included in this recipe are some superfoods worth highlighting:
Mushrooms are rich in selenium, thiamin, and magnesium. Studies have also found they may help reduce the risk of developing Alzheimer’s disease, heart disease, cancer, and diabetes. (reference)
Garlic is an incredible anti-inflammatory and immunity booster. Garlic supports healthy blood vessels and blood flow, supporting heart health and healthy blood pressure. It also decreases inflammation, which can improve joint health and decrease joint pain.
Servings: 4
Ingredients:
24 oz. whole mushrooms (about 40 mushrooms)
2 Tablespoons olive oil
2 teaspoons minced garlic
1 T. Italian seasoning
½ teaspoon salt (to taste)
Directions:
Preheat the oven to 400 degrees F.
Wash the mushrooms, removing any loose dirt, and remove the stems if desired (this is optional).
Place the mushrooms in a greased 8x8 glass baking dish, then add the olive oil, minced garlic, Italian seasoning, and salt. Mix together with a spoon until the mushrooms are evenly coated with the spices.
Roast in the oven for 25 minutes, until the mushrooms are soft.
Serve immediately and enjoy.
