Servings: 6

Ingredients:

  • 1 lb. Brussel sprouts, stems removed and cut in half lengthwise

  • 2 Tablespoons + ½ cup olive oil

  • ¼ cup apple cider vinegar

  • 2 Tablespoons honey

  • 2 Tablespoons Dijon mustard

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 leeks, white part only, thinly sliced

  • ½ cup pecans, chopped

  • 2 Tablespoons fresh chives, chopped

  • ⅓ cup dried cranberries (unsweetened, no added sugar)

Directions:

  • Preheat the oven to 375 degrees F.

  • Spread the Brussels sprouts evenly across a sheet pan and drizzle with roughly 2 Tablespoons of olive oil until the Brussels sprouts are evenly coated with oil.

  • Sprinkle with salt, then roast in the oven for 25-30 minutes, until the Brussels sprouts are soft and a little crispy. Then, move them from the oven and set them aside.

  • Prepare the dressing by combining the olive oil, apple cider vinegar, honey, dijon mustard, salt, and pepper in a bowl.

  • In a large bowl, add the sliced leeks and Brussels sprouts.

  • Pour the dressing into the bowl and mix well.

  • Add the chopped pecans, fresh chives, and dried cranberries.

  • Enjoy!
