Ingredients:

  • 2 small zucchinis, cubed

  • 1 pint cherry tomatoes, cut in halves

  • 1 red onion, wedged or cubed

  • 4 Tablespoons olive or avocado oil

  • salt & pepper

  • 3 oz feta cheese

  • fresh basil for garnish

Directions:

  • Preheat oven to 425 degrees F.

  • Prepare the vegetables, then mix them in a bowl with olive oil

  • Lay in a single layer on a sheet pan or 9x13 baking dish.

  • Lightly season with salt and pepper, then sprinkle on the feta cheese.

  • Bake for 20-25 minutes until the vegetables are soft and feta is slightly brown.

  • Garnish with fresh basil and serve.
