Banana and Almond Oatmeal with Homemade Granola

Ingredients for the granola:

  • 1 cup old-fashioned oats

  • ½ cup chopped almonds

  • 1 Tablespoon coconut oil

  • 1 Tablespoon honey

  • ¼ teaspoon cinnamon

  • Pinch of salt

Ingredients for the oatmeal:

  • 1 cup old-fashioned oats

  • 2 cups almond milk

  • ¼ teaspoon cinnamon

  • Pinch of salt

  • 2 ripe bananas, sliced

  • 2 Tablespoons almond butter

  • Optional: drizzle of honey

Instructions:

  1. Make the granola: Preheat the oven to 325°F (165°C). Mix the oats and chopped almonds in a bowl. In a separate bowl, warm the coconut oil and honey together until they are melted. Pour the mixture over the oats and almonds, then add the cinnamon and salt and stir well. Spread the granola onto a lined baking sheet and bake for 15-20. minutes, stirring once halfway through. Allow the granola to cool completely (it will crisp up as it cools).

  2. Prepare the oatmeal: In a small saucepan, combine the oats, milk, cinnamon, and salt. Bring everything to a boil, then reduce the heat to low and allow to simmer for 5-7 minutes, stirring occasionally until it has reached the desired consistency.

  3. Assemble and serve: Divide the oatmeal between bowls, then top each bowl with sliced banana, 1 Tablespoon almond butter, a generous sprinkle of homemade granola, and an optional drizzle of honey.
