Greek Meatloaf with Homemade Tzatziki

The real star of the show is the creamy, homemade tzatziki sauce that adds a cool, refreshing contrast to every bite. Ingredients for the tzatziki sauce:
2 cups Greek yogurt (full-fat, plain)
1 English cucumber, grated
4 cloves garlic, minced
2 Tablespoons fresh dill, finely chopped
2 Tablespoons extra virgin olive oil
1 Tablespoon fresh lemon juice
½ teaspoon sea salt
¼ teaspoon black pepper
Ingredients for the meatloaf:
2 lbs lean ground beef
1 cup whole wheat breadcrumbs (can use gluten-free if needed)
2 large eggs
1 red onion, finely diced
4 cloves garlic, minced
1 cup spinach, chopped
1 red bell pepper, diced
1 cup crumbled feta cheese
½ cup Kalamata olives, chopped
2 Tablespoons fresh oregano, chopped
2 Tablespoons fresh parsley, chopped
1 Tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon sea salt
½ teaspoon black pepper
Ingredients for the topping:
2 Tablespoons tomato paste
1 Tablespoon olive oil
1 teaspoon dried oregano
½ cup crumbled feta cheese
Instructions:
To make the tzatziki sauce, grate the cucumber using a box grater or food processor. Then, place the grated cucumber in a clean kitchen towel or cheesecloth and squeeze out the excess moisture.
In a large bowl, combine the Greek yogurt, drained cucumber, minced garlic, and chopped dill. Then, add the olive oil, lemon juice, salt, and pepper, and mix thoroughly.
Cover and refrigerate while preparing and cooking the meatloaf to allow the flavors to meld together.
Preheat the oven to 350°F (175°C).
Heat the olive oil in a pan over medium heat, then sauté the onion and garlic until softened, about 5 minutes. Add the bell pepper and cook for 2 more minutes. Allow to cool.
In a large bowl, combine the ground beef, breadcrumbs, eggs, cooled onion and bell pepper mixture, spinach, feta, olives, and all of the fresh herbs and seasonings.
Mix thoroughly with your hands until well combined, but do not overmix.
Transfer the mixture to a greased 9x5 inch loaf pan, pressing down gently.
Mix the tomato paste with olive oil and dried oregano, then spread it over the meatloaf.
Bake for 45 minutes, then remove from the oven.
Sprinkle with the remaining feta cheese on top and bake for an additional 15 minutes or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving with the homemade tzatziki.
