Avocado Toast with Tomato, Feta & Balsamic Reduction

Indulge in this delicious avocado toast recipe that combines creamy avocado, tangy feta cheese, and a sweet and savory balsamic reduction. This mouthwatering dish is perfect for breakfast, brunch, or even as a quick and easy snack.

Servings: 2
Ingredients:
2 slices whole grain or gluten-free bread, toasted
1 avocado
1 teaspoon lemon juice
2 Tablespoons crumbled feta cheese
¼ cup cherry tomatoes, cut in halves
1 Tablespoon balsamic reduction
salt and pepper to taste
red pepper flakes to taste
Directions:
Toast two slices of your favorite whole grain or gluten-free bread.
Cut an avocado in half and remove the pit.
Using a knife, carefully cut the avocado into chunks while it is still in the peel.
Use a spoon to scoop out the avocado and add it to a bowl.
Add the lemon juice to the bowl with the avocado, then use a fork to mash up the avocado.
Spread the mashed avocado onto the toasted bread, then layer on the crumbled feta cheese and halved cherry tomatoes.
Carefully drizzle the balsamic reduction onto the toast, then season with salt, pepper, and red pepper flake to taste. Enjoy!
Note: To make your own balsamic reduction, add balsamic vinegar to a saucepan and bring to a gentle boil over medium heat. Once you have reached a gentle boil, reduce the heat to medium, and allow the vinegar to reduce and thicken (it will take approximately 20 minutes). Once thickened, remove the saucepan from the heat, and allow the glaze to cool. The glaze will thicken more as it cools.
