Prep Your Space:
For this recipe, you will need:
measuring cups and spoons
Servings: 8 waffles
Ingredients:
2 cups gluten-free flour (I use this brand)
2 eggs
1 ¾ cup unsweetened almond milk
½ cup unsweetened applesauce (1 small applesauce cup)
4 teaspoons baking powder
¼ teaspoon salt
1 teaspoon real vanilla extract
Directions:
Turn on your waffle iron and allow it to warm up.
In a large mixing bowl, combine all of the ingredients and mix.
Spray the waffle iron, then using the ½ cup measuring cup, scoop the batter and pour it onto the waffle iron. You may need to use more or less than ½ cup of the batter for each waffle, depending on the size and shape of your waffle mold.
Allow the waffles to cook for 3-4 minutes, depending on the heat of your waffle iron. Check on your waffles after 3 minutes and adjust the time from there.
Transfer the cooked waffles onto a cooling rack or serve immediately.
For leftover waffles, allow them to cool on the cooling rack completely before transferring them to the fridge or freezer to prevent them from becoming soft and mushy.
Notes:
These waffles freeze really well. Allow them to fully cool before freezing them. You can easily reheat them by putting them in the toaster, making them nice and crisp for serving.
Fun and delicious additions:
Diced apples, dried cranberries, and chopped walnuts or pecans
Semi-sweet enjoy-life chocolate chips (top with fresh or canned pumpkin!)
Fresh blueberries and chopped walnuts
