Ingredients:
2 cups whole wheat flour (see notes for gluten-free options)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon salt
1 cup whole, plain Greek yogurt
½ cup olive oil
½ cup honey
2 large eggs
2 teaspoons pure vanilla extract
2 cups peeled and diced apples (about 2 medium apples)
Note:
To make this recipe gluten-free, try King Arthur’s Measure for Measure Gluten Free Flour or Cup 4 Cup’s Gluten Free Flour. To make the recipe gluten-free and lower in carbs, I recommend using Blue Diamond’s Almond Flour (a 1:1 replacement).
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a bundt pan.
In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
In another bowl, mix the Greek yogurt, olive oil, honey, eggs, and vanilla extract until smooth.
Gradually add the wet mixture to the dry ingredients. Stir until just combined; do not overmix.
Gently fold in the diced apples until evenly distributed throughout the batter.
Pour the batter into the prepared bundt pan and spread it evenly.
Bake for approximately 45-50 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
